MidWeek Meal


Last night I didn't realize I was hungry until I was almost Hangry lol. So I ran to the fridge to try to throw together something as quick as possible. Thankfully the fridge was stocked with nothing but healthy choices :) What I found was spinach, onion, mushrooms, turkey bacon, eggs and some left over noodle that GrandMa had prepared the kiddos the night before... So I dumped it all in a skillet and hoped something edible would come out of it.
1. brown turkey bacon
2. sweat onions
3. add liquid aminos (a couple of sprays will do)
4. add mushrooms
5.add spinach and wilt
6. pan fry an egg in coconut oil (S&P, garlic to taste)
7. pour mixture over left over noodles or rice
(you can sprinkle a tiny bit of mozzarella for added flavor)


My LO's love egg so anything with egg and mushroom they tend to consume happily (I'm blessed in that department)
The moral of this story is don't be afraid to just try new things and if you only bring healthy foods into your home even in moments of weakness you'll still come out of it with a decently nutritious meal.

Silent Killer

From my heart... Being a mental health professional I hear people talk about depression and mental illness all day everyday. I read the statistics and reports about the "system" failing individuals quite frequently, But, when tragedy hits close to home it can be a LOUD  wake-up call! It's hard for me to understand the fact that mental illness is still a taboo thing. I personally don't understand why it's not a more discussed topic, why there aren't enough resources and access to treatment. Here in the US we have option after option for physical healthcare. If you don't like a physician for whatever reason all you have to do is walk across the hall or drive across the street and there are at least 10 more for the choosing. Why aren't there just as many easy options for mental healthcare treatment?  These day there is a checklist for "warning signs" for every ailment out there and I want to be sure that depression warning signs are top of mind...
